LUMPIA
Lumpia, 'Sausage' with various fillers served with onion sauce
You might find lumpia in many parts of Java Island; however, delicious lumpia can only be found in certain areas. Yogyakarta is the right place for lumpia lovers because it has various kinds of very delicious lumpia. Here, lumpia used to be sold by vendors in the markets in 1940s and now it is even available as prestigious snack sold in modern supermarkets.
There is no distinct history of the naming of lumpia, but its deliciousness is acknowledged by many people. Lumpia is made from the wrapper composing of flour mixed with egg. The wrapper is then used to roll the fillers that vary from one producer to others. The sausage-like lumpia is then fried with medium heat to get excellent frying.
There are two kinds of lumpia in Yogyakarta, namely one with dry roller and the other one with wet roller. Lumpia with dry roller will taste crispy while the wet one will give smooth and rich taste to the tongue. No one is more delicious because each of them has its own characteristic resulted from the composition of the raw materials and different process of cooking. All are worth trying.
The rich flavor of the roller will mix with the salty, sweet and sour taste of the fillers. The combination of such tastes will give delicious sensation from the first bite. The original lumpia is filled with bamboo shoot that is specially cooked to give sweet taste. Some producers add other ingredients such as carrot to enrich the flavor.
There is also chicken lumpia that is cooked with special ingredients, composing of garlic, onion, palm sugar and others. The marinated chicken is cooked and meshed to form brownish mixture.
The filler rich with flavors and the rich roller are usually enjoyed with two kinds of sauce, namely onion sauce and Semarang sauce. Onion sauce, as the name suggests, is made of meshed onion and cooked with water until it is thick, while Semarang sauce is made from different Javanese ingredients, of brown color and it is thicker. To give refreshing taste, those sauces are complemented with pickle, made from cucumber added with vinegar.
Lumpia and the condiments are usually served on a saucer. This is how to eat lumpia: take some sauce using fork and let it come into the filler by stabbing in on the lumpia. Semarang sauce, on the other hand, is poured on the surface of lumpia with the pickle. Then, you can cut the lumpia into pieces. If you like, you can bite the hot, green chili that usually comes with the pickle while enjoying the lumpia.
